Estudo da conservação de mamão Havaí utilizando películas comestíveis a diferentes temperaturas
Abstract
As películas comestíveis representam uma boa alternativa para conservar os vegetais, principalmente se estiver associada ao uso da refrigeração. Objetivou-se estudar o uso de duas películas, de fécula de batata e fécula de mandioca, em mamões Havaí (Carica papaya L.) cortado ao meio e armazenado a diferentes temperaturas, 25°C e 8°C, avaliando a perda de peso, a cor da polpa, pH, acidez total titulável, e conteúdo de sólidos solúveis totais. As películas foi eficiente na conservação de mamão Havaí durante seis dias de armazenamento, principalmente quando armazenado sobre refrigeração.
