Optimization of the recovery and concentration of bromelain using ceramic membranes

The processes of separation for membranes present an alternative technically and economically attractive to recover and purify proteins. These processes demand little energy, besides presenting great specificity in separation. Bromelain is a proteolytic enzyme that has a high medicinal value. Its action includes: inhibition of the platelet aggregation, fibrinolytic activity, anti-inflammatory, antitumoral, increased absorption of other drugs, facilitating digestion, healing accelerator, etc.. In view of the importance of the above-mentioned enzyme was held above the optimization of the recovery and concentration of bromelain from pineapple (Ananas comosus) using ceramic membranes.Downloads
