Physical chemistry analysis for the evaluation of milk quality properties located in the northern region of the State of Sergipe

From the technological point of view, the quality of the raw material is one of the biggest barriers to the development and consolidation of the dairy industry in Brazil. The analysis of physical-chemical composition of milk is important because it is also considered, together with the microbiological analysis, parameters of milk quality, establish enabling thus a criterion for payment to the producer. The purpose of this experiment was monitored in all the milk samples that were collected in the properties at the end of milking and also collected in receipt of a dairy located in the northern state of Sergipe platform. Samples from21dairy production units were analyzed the samples taken on two consecutive days for each producer, totaling 84analyzes that were classified according to the type of milking, feeding and production of the flock, being divided into two categories: small producer (PP) and high producers (MPs). 10PPsthat are characterized by feeding animals on pasture and daily average production of less than100Land 11MPs, characterized by predominant feeding on pasture were selected, supplemented with concentrate feed (approximately 1% of live weight) and daily production exceeding 100 lof milk. Where average values obtained for PPS alizaro l68.9, Dornic 15.65, fat 3.85, density 32.20, 3,149proteins, added waterand0.09respectivelyforMPsto56.81; 16.02; 3.96;33.18; 3,189; 0.0. Wherein showed that both forms of production showed a good quality of the end product.
