The Brazilian Northeast has an extensive land suitable for cultivation of oilseeds to produce vegetable oils. Vegetable oils have many applications in industrial processes and due to this potential has steadily increased its production demand. This study aims to assess the potential and characteristics of sunflower oil and coconut produced in the state of Rio Grande do Norte. Sunflower oil and coconut were obtained by mechanical extraction and characterized for their physicochemical properties and fatty acid composition (using gas chromatography). The results showed good physical and chemical characteristics of the product reviews ahead of its various industrial applications. The chromatographic analysis demonstrated that the sunflower oil present as the major fatty acidsoleic acid (49.02%) and linoleic acid (45.35%), while coconut oil showed lauric acid (40.8%) and major fatty acid.Downloads
