Determination of content protein and Proteolytic activity of pineapple (Ananas comosus var. comosus) agroindustrial waste

Increasing demand for Brazilian agribusiness, no generation of large amounts of waste from the agroindustria processing. In this context, we can mention the pineapple, which only the fruit is sold, the remainder is considered agricultural waste being discarded. This study aimed to evaluated the value of total protein (VPT), activity proteolytic (AP) and specific (SA) waste pineapple cultivar 'Perola'. The extracts were obtained by crushing the peel and crown in three different buffer solutions: acetate pH 4 and pH 5 and pH 7 phosphate. The SA was carried out by the ratio between PA and TPT. Results were subjected to analysis of variance (ANOVA), and medium followed by the Tukey test (p <0.05). In relation of SA peel, acetate buffer pH 4 showed high value (441.1836 U / ml) compared to other buffer, while acetate buffer pH 5 and pH 7 phosphate not showed statistically significant differences between them (298.2598 U / ml; 314.0844 U / ml, respectively). In SA crown, both buffers, acetate pH 4 (317.9444 U / ml) and pH 5 (324.8039 U / ml) showed better results than the phosphate pH 7 (143.0445 U / ml).Therefore and considering that SA in crown the buffer acetate pH 4 and pH 5 had not statistically significant differences between them, it is concluded that pH 4 acetate buffer is the best extraction of proteolytic enzymes in both residues.Downloads
