Abstract

The apiculture is an important socioeconomic activity in the Northeast of Brazil, particularly in Sergipe. This study aimed to evaluate the quality of honey produced from different districts of Sergipe in the period between January 2007 and December 2009. Assays were performed to identify adulteration in honey (Fiehe, Lund and Lugol), physical-chemistry (hydroxymethylfurfural - HMF, moisture, ash, reducing sugars and total acidity), macroscopic and microbiological analysis (total coliforms and thermotolerant, Salmonella sp., Yeasts and molds and total bacteria). A quantity of 66 samples was obtained from different apiaries, all of which were adopted with respect to microbiological analysis, 86% with respect to macroscopic. As an exception had to failure of 68.2% for the test Fiehe, 54% for HMF, 34.8% to 37.9% for acidity and sugars.
