Honeys from the northeastern semi-arid: An evaluation of its volatile compounds and physicochemical parameters

Abstract

Honey is a natural food with complex composition that can be easily modified. Every year, Brazil harvests a lot of honey with different propeties, because of this, it is necessary to estimate quality parameters and discover its properties. This paper examined physico-chemical parameters like moisture, reducing sugars, sucrose, acidity and insoluble solids from five honey samples originating from Brazil’s northeastern semiarid. Along the evaluation of total phenolic and flavonoid content by Spectrophotometry and chromatographic techniques to discover it’s volatile profile. The results confirmed that all of the honey samples complied with quality standarts evaluated through physico-chemical analyses, with variations for each harvests and collection site. The measured values for total phenolic and flavonoids content seem to be higher those reported in other papers, reinforcing its antioxidant properties. The results from cromatographic analyses make it possible to identify the presence of floral markers like trans-linalool oxide (furanoid) from angico honey (Anadenanthera cf. Colubrina) and 4-oxoisophorone from algaroba honey (Prosopis juliflora (Sw.)).
